River trout from the Pyrenees

This fish has traditionally been part of the diet in the Pyrenees, where its abundance was used in the torrents that fed the Segre or the Noguera. Today, most of these salmonids come from fish farms due to the regression of the species with the disappearance of part of its habitat, although in recent years a significant recovery effort is being made.

The variety of native trout is the common trout, Salmo trutta fario, a slender greenish fish dotted with red and black that likes to lay in the gravel of the clean part of the rivers. This species is increasing, probably due to the involuntary repopulation being carried out by fish farms from which specimens often escape. But the main trout species is the rainbow trout, Oncorhynchus mikiss, which is of American origin and was imported to Europe around 1880. The climatic conditions of Pallars provide trout with a higher quality than that of other areas, and the most appreciated is the pescada, whose season lasts between the months of March and August.
