Quince allioli is a typical product of Pallars mountain cuisine, although it is also made in some places in Alt Urgell and Cerdanya. Take advantage of the cultivation of quince, one of the few fruits well adapted to the cold mountain temperatures and typical of autumn. Most of the harvest is used to make quince and the rest is used for this allioli.
It is sold, canned and in glass jars, in some establishments in Pallars, especially in butchers and charcuterie, delis or in small grocery stores.
It is a very nutritious food, as it is made with three very beneficial ingredients for our body: garlic, quince and olive oil. Raw garlic, in addition to giving flavor, has antibacterial, antiparasitic and anticancer properties, which makes it suitable for treating digestive problems and hypertension, among others. Quince is a fruit low in sugars and quite rich in fiber and vitamins, such as vitamin E, which gives it an antioxidant power. And finally, olive oil is rich in monounsaturated fatty acids and antioxidants with heart-healthy properties.
