Tellerina from Roses

A small, triangular shaped bivalve mollusc whose consumption has been linked to the Costa Brava for centuries, as it was part of a recipe book of Catalan cuisine from 1520.

With a scientific name Donax trunculus, it is a bivalve mollusc, with a fragile and smooth shell of white-brownish color, and with a size of 2.5 to 3.5 cm. Formerly it was buried in the sand, but now it lives in colonies on the sandy bottoms near the coast, where it is fished with artisanal or semi-industrial methods, such as trawling, dredges, rakes or by hand. It is found on the coasts of the Ebro regions, but also on the Costa Brava, in the Gulf of Roses, in the areas of L'Estartit, L'Escala, Fluvià and Santa Margarita. It is usually consumed as an appetizer or as a second course, but also as an accompaniment to many fish dishes.
