Salsafin is a root similar to turnip, but with a finer taste, typical of girona orchards that has experienced revitalization efforts in recent years.
Salsafin – Tagopogon porrifolius – is a plant of the compost family, native to the Mediterranean area of southern Europe that, historically, has been cultivated in the Girona region. It is an elongated root of brownish color on the outside and has a pleasant and soft texture, and a sweet, delicate and exquisite taste. It allows long preservation in fresh places and is usually consumed stew, as well as seasoned or fried.
It is found in season in the markets and some shops in the Girona region, close to the production areas.
Salsafin is a root that contains mainly water (more than 90%), so it provides little energy. In addition, it is a very good source of fiber and minerals. It is a good option for diabetics or people who have to reduce sugar and at the same time increase the fiber of some preparations since, due to its tuber-like texture, it can be used in stews and other preparations to replace the potato.
