The cake and bread of Sant Jordi are recent ideas, promoted by the Guild of Bakers of Barcelona, which have been imposed since the 1980s to provide the Diada de Sant Jordi, on April 23, with their own bakery specialties.
The Sant Jordi cake is a typical rectangular sponge cake, but with more layers of butter interspersed between the thin cuts of sponge cake. This cake is not decorated on the sides with butter, pieces of almond or chocolate, but the layers should look like sheets of a book. It is garnished with burnt sugar or icing sugar and engraved on a Saint George's Day and/or a red rose.

For the Diada de Sant Jordi, it is sold in bakeries and bakeries throughout Catalonia, but especially in Barcelona.
It is a product with a high energy value. Its main component is carbohydrates, both simple and complex. It is also a good source of high quality protein. Keep in mind that the butter in gingerbread is a source of saturated fat and cholesterol. Within a varied and balanced diet, it can be consumed occasionally.
