Coquetes

It is a typical specialty of the cuisine of the Pyrenees derived from the pork slaughter and that still survives today in the Alta Ribagorça region.

They have a rounded and flat shape, like a kind of meat biscuits. With a greasy texture and dark brown color, they are made with the same ingredients as a black sausage: pork blood, fat, pepper, salt, matafaluga, flour, water and olive oil. A mixture is made with chopped bread, fat, water and blood, which is seasoned with salt, pepper and matafaluga, and thickened with flour. Fritters are made, elongated and flattened, which are brought to a boil for a while.

Its production has gone from houses to butchers in the region. They are usually eaten grilled or fried and must be consumed fresh, as they can be stored for up to a maximum of 10 days.
