This fish has been a regular catch in the Ebro Delta and is one of the basic ingredients of its unique gastronomy. With it, a very traditional preserve was made, the xapadillo, which the restorers of the area have recovered.
Eel is a fish with a very long and cylindrical body, with small scales and a mucous and slippery surface of brown or greenish color. It is a migratory species that lives in both salt and fresh water. Small eels, called elvers, do not exceed 10 cm. Large ones can reach 80 cm in length. For its capture, in Terres de l'Ebre the practice of gargoyle is used, which consists of the use of an elongated net bag supported by a round iron structure. They have an intense flavor and consistent meat.
The eel is sold in canned food, the so-called xapadillos, in grosseries in the area. It is also sold fresh in fishmongers in the area and other parts of Catalonia.
It is a blue fish and therefore has a high content of fat and cholesterol. But unlike other blue fish, eel has a low amount of omega-3 fatty acids. The excellence of this fish is conferred by the large amount of vitamin A that it stores inside the fat, which helps the growth of the body, improves vision and the condition of the skin. It also has a remarkable amount of vitamin E, with antioxidant activity.
