Pine nut pancakes

    • 600 g pine nuts
    • 3 eggs
    • To make marzipan dough:
    • 500 g of powdered almonds
    • 500 g sugar
    • 100 g of cooked sweet potato
    • 75 g egg white

    • Preparation

      Make a thin dough by mixing and working all the ingredients well.
      Let it sit in the refrigerator for a minimum of 24 hours, wrapped in a damp cloth.
      Make marzipan balls of about 20 g, coat them with egg and stick the pine nuts in them by pressing a little.
      Paint the pancakes with egg.
      In a greased tin with extra virgin olive oil, place them in the oven at 230-250º for about 10 minutes, until golden.

      Variations:
      Instead of sweet potatoes they can be made with potatoes.
      Instead of pine nuts you can make almond pancakes, coconut pancakes, coffee pancakes or quince pancakes.
