Soups, escudella, broths, porridge and creams
Bring chicken and bones to a boil in a pot of cold water.
Bring to a boil for an hour, degreasing from time to time.
Add the vegetables and bring it to a boil for another hour.
Salt it and strain.
Variations:
Instead of chicken it can be made with scalded chicken or chicken carcanades.
It can be made only with chicken.
