They are a sweet specialty that was formerly made only at Christmas and its origin dates back to the late nineteenth century.
The rolls of the secret are rounded pastries with a hole in the middle, similar to a donut, which are made with olive oil, eggs, flour, sugar, milk and brandy, today often replaced by anise. They are shaped into donuts and baked. In Ulldecona they are very whitish because of the layer of sugar that covers them. As they are a dry paste, they have a high shelf life. They are usually consumed for breakfast or blessing, as well as between meals.
They are sold throughout the year in pastry shops in the Montsià region.
