Careful process and unique taste
Made with the Palomar or Olesana olive variety, Olesa de Montserrat oil is a mature, balanced and half-fruity oil. It contains a low degree of acidity, only 0.15 degrees and a high content of oleic acid that makes it more advisable at the cardiovascular level. All these assets have made it obtain the commercial category of Extra Virgin.
The olive trees are located in a geographical area with steep slopes, on soils rich in llicorella and on small farms. The olive tree harvesting process is manual and begins at the beginning of November. Depending on the climate, the harvest of the Palomar olive variety ranges between 150,000 and 400,000 kilos. From harvest to extraction, a maximum of 48 hours pass and the oil extraction process is done cold, thus being oil of first extraction without filtering.
Low acidity, only 0.15º, and high oleic acid content, which makes it more advisable for cardiovascular health. It is a mature, balanced and moderately fruity oil.
