Q-branded capons are castrated chickens that come from selected slow-growing lineages. Castration of these animals is carried out exclusively surgically.
The process of birth and fattening of these capon is permanently controlled. In their diet, quality raw materials such as cereals and, especially, corn are used two months before slaughter. The sacrifice may not be made before one hundred and fifty-five days. Its meat is tastier and more consistent than that of non-castrated chicken.
The meats marketed from this capon are category A carcasses and are presented with the corresponding certification, either in the traditional way without casings, or prepared for baking. They are sold in polleries throughout Catalonia.
The capon is distinguished from the common chicken by having a more pronounced taste and more tender meat. The fact of being more tender is due to the fact that its fat content is higher and that it is localized among muscle tissue. As for the rest of the components, it has the same properties as common chicken, that is, like all meats, it is a good source of protein and, being a white meat, it is easy to digest. As for vitamins, its content of vitamin B3 stands out and has more phosphorus and potassium than other meats.
