Put in a mixer the tomato without skin nor seeds, the peeled garlic, the flesh of the peppers, almonds and hazelnuts, the red pepper, the chili and cookies.
Grind everything and add slowly oil, a dash of vinegar, salt and pepper.
Garlic and tomato can be fried instead grilled.
Instead of romesco peppers you can put dried peppers.
You can thicken the sauce with fried bread or dried bread crumbs soaked in vinegar.
You can add a touch of raw garlic.
It can be made with almond or hazelnut alone.
