Ingredients:
  • Bones and head of a white fish
  • Onions
  • Carrots
  • Leeks
  • Celery
  • Water
Introduction:

Also known as fish fumet.

Preparation:

Place the fish in cold water and boil.
When it starts to boil, skim the foam and add the vegetables.
Boil for 30 minutes.

Variations:
Add ground black pepper.
Make with only the fish, without vegetables.
Add a bay leaf.
Add a reduction of white wine.
Add crab, mantis shrimp, scorpion fish or other fish.
