  • 400 g - Number 2 vermicelli
  • 1 - Onion, chopped
  • 2 - Tomatoes, chopped
  • 4 cloves - Garlic, sliced
  • 4 - Shrimp
  • 4 - Crawfish
  • 800 g - Cuttlefish
  • 1 teaspoon - Paprika
  • 80 cl - Water
  • Non-emulsified "allioli" (aioli), with parsley

Stir fry the shrimp and crawfish on high heat and reserve.

In the same oil, thoroughly stir fry the onion, garlic and tomatoes.

Add the cuttlefish. When it is soft, cover with water.

When it starts to boil, add the noodles, boil on low heat, adding the shrimp and crawfish just at the end.

Prepare the non-emulsified allioli with parsley and pour it over the noodles just before serving.

Omit onion from the stir fry.

The noodles can be vermicelli or bucatini.

Substitute squid for the cuttlefish, totally or partially.

Fish broth may be used instead of water.

Reduce the white wine before adding the water.

May be made with sardines, fresh anchovies, mantis shrimp, cod, etc.
