  • 250 g - Flour
  • 250 g - Sugar
  • 4 - Eggs
  • 25 cl - Milk
  • 1 envelope - Baking powder
  • 1 teaspoon - Oil
  • 1 - Lemon peel, grated

Beat the egg whites until stiff.

Forcefully beat the egg yolks along with the sugar and the lemon peel.

Add the sifted flour and, finally, gently add the egg whites.

Pour in a baking pan and bake in a pre-heated oven at 170ºC for 30 minutes.

Substitute olive oil for milk, completely or partially.

If preferred, you may sprinkle some pine nuts on top, just before the end of the cooking time.

Brush with beaten egg and sugar shortly before the end of the cooking time.

May be prepared without baking powder or milk.
