  • Chicken with prunes and pine nuts
  • 1 - Farm raised chicken, cut in eight pieces
  • 250 g - Prunes
  • 100 g - Pine nuts
  • 2 - Onions
  • 1 head - Garlic
  • 1 stick - Cinnamon
  • 1 cup - Brandy
  • Thyme
  • 1 - Bay leaf
  • Oil
  • Lard
  • Salt
  • Pepper
  • Water

Ingredients for 6 people


Season the chicken and brown in oil and lard, along with the cinnamon stick.

Add the onion, the bay leaf and the whole head of garlic, brown the mixture all together.

Add the brandy and reduce. Add the thyme.

Cover the pan and cook on low heat, adding a little water occasionally.

Soak the prunes and lightly toast the pine nuts. 15 minutes before turning off the heat, add the prunes and pine nuts.

Substitute garnacha, vermouth or white wine for the brandy.

Use oregano instead of thyme, or use in addition.

Use other dried fruit such as dried apricots.
