  • 1 - Chicken, cut in pieces
  • 12 - Crawfish
  • 2 - Onions, chopped
  • 3 - Tomatoes, grated
  • A splash - Brandy
  • Oil
  • Salt
  • Pepper
  • Flour
  • Water
  • For the "majada" (crushed garnish):
  • 1 handful - Almonds
  • 2 - Plain cookies or some stale bread, grated
  • Garlic
  • Parsley
  • A little soured wine

Ingredients for 6 people.


Season, dredge in flour and brown the chicken pieces. Reserve.

In the same oil, fry the crawfish and reserve.

Thoroughly stir fry the onion and tomato in the same oil.

Return the chicken to the pan, flambe with brandy and cover with water.

Cook to finish. 10 minutes before the end of the cooking time, add the crawfish and the majada dissolved in the soured wine.

A square of black chocolate (about 10g) can be added to the majada.

Use prawns or squid instead of crawfish.

Use rabbit instead of chicken.
