'Xolís' is a pork sausage made in farmhouses with the best meat from the pig, obtained during the slaughter from December to January, which has a long shelf life.

The best meats are selected to make it: ham, loin and a mixture of dewlap and bacon fat, salt and pepper. It is stuffed into an intestine casing and left to age outdoors, where the climate of Pallars bestows a typical taste on it once dry.
