Wild mustard, col del país, col d'hivern

Brassica oleracea, or wild mustard, is traditionally grown in Osona and has a particularly distinct taste.

The leaves of this plant are very curly and it is extremely resistant to the cold. It is planted in late July or early August and is a small cabbage, about a hand span in diameter, which forms a stout rosette of ribbed leaves. Its organoleptic qualities are enhanced if it has undergone very cold patches while growing.
