Tapenade is an olive pÔtÚ. It is typical of Mediterranean countries and generally made with black olives, although it can also be produced from green olives.

Arbequina olives are ground and extra virgin olive oil is added, resulting in a pÔtÚ that makes a delicious snack. Its basic ingredients are pitted olives, olive oil and salt. Some tapenades also contain herbs or spices. The quality of the tapenade is a direct result of the quality of the olives and the oil used. Tapenade is excellent eaten as pÔtÚ, spread onto a cracker. It is also a perfect ingredient for making vinaigrette, and to season fish and vegetable dishes.
