A traditional cheese from the Pyrenees that was revived at the end of last century by some cheesemakers.

This cheese is made from sheep's milk and produced by hand from the raw milk. With lactic coagulation and soft curd, it is aged for around 8 weeks in a cellar. It is produced from spring to autumn. This cheese is hard, small, compact and dense. On the outside it is yellow, with very fine smooth skin that is waxy in appearance and has no cracks. In the mouth it is strong and a little spicy.
