Sea urchin

In addition to sea urchin (‘garoina' in Catalan), this goes by various names in Catalonia (‘garota', ‘oriç', ‘urís', ‘garota de roca', ‘bogamarí' and ‘eriçó de mar'), although all denote the echinoderm Paracentrotus lividus - a round, spiny creature that is found all over the Costa Brava.

The edible parts of the sea urchin are the reproductive organs which are removed by slicing it through its flat base. The meat, succulent and soft and with a distinct flavour of the sea, is considered a delicacy. Best eaten from January to April.

Complementary information:

Sold fresh, in season, by fishmongers. Sea urchins are protected by guidelines that regulate catches to a minimum size and a specific period of the year. Only professional fishermen with specific authorization from the Directorate General of Fisheries and Maritime Affairs can catch them. Also sold, in preserve, in specialist shops.
