Sant Jordi (Saint George) cake and bread are recent innovations that came into vogue in the 1980s despite the 23rd of April (Saint George's day) being a working day, thanks to the arduous work carried out by bakers guilds.

Sant Jordi cake is a typical rectangular sponge cake which is sliced into several thin layers that are spread with butter. However, the sides should not be decorated with butter, almond shards or chocolate as the layers should resemble the pages of a book. It is decorated with burnt sugar and engraved with a Saint George and/or red rose.
