Sant Jordi (Saint George) cake and bread are recent innovations that came into vogue in the 1980s despite the 23rd of April (Saint George's day) being a working day, thanks to the arduous work carried out by bakers guilds. It was created by the Bakers Guild (Gremi de Flequers) of Barcelona.

The bread represents the Catalan coat of arms - four red stripes on a yellow background. It is painstakingly made from three types of dough: walnut, sobrassada (Marjorcan cured sausage) and cheese. It is rich and aromatic.
