Rovelló

The rovelló, esclata-sang, pinenc, pinenca or paratge (Lactarius sanguifluus) is the most popular mushroom in Catalonia and most in demand at market stalls.

It belongs to the order Russulales and can be found in pine forests from late August to December. The cap is fleshy and wide, funnel-shaped when large and concave when small, the colour is orange-red and it sometimes has green markings. The stem is thick and hollow. With regard to flavour, it is strong with a slightly bitter finish and the flesh is succulent with a pleasant woody fragrance. It is best eaten baked in the pan or grilled simply with a little chopped garlic and parsley and a drizzle of oil, although it also adapts to other dishes such as meat stews.
