Romesco sauce

Considered to be one of the most emblematic sauces of Catalan cuisine, this was first made in Camp de Tarragona, possibly in the early 18th century by which time some of its ingredients that had been brought from the New World had become widespread.

There are many variations on the recipe, and its consistency can therefore also vary considerably. In colour it ranges from tones of orange to red. The flavour is strong, pervasive and refreshing. It is made from a mixture of the following ingredients: red pepper, olive oil, ripe tomato, garlic, vinegar, capsicum, salt, fried bread and chopped almonds or hazelnuts.
