The calves that come under this denomination are all from exclusively-farmed cows that are born and bred outdoors, in the fields, around the Berguedà and neighbouring regions.

The calves are of the breed Bruna dels Pirineus and come from crosses with bulls of the breed Bruna, Charolais, Limousin or Blanc Blau dels Pirineus. The calves are fattened naturally. When born they are fed exclusively on maternal milk, then weaned at 5-6 months and fed on cereals, leguminous grains and other such ingredients (corn, barley, soy, rye and carob). It is all of this that gives the veal of the Berguedà, sold under this denomination, its utmost nutritional and taste qualities.
