Panallets (marzipan sweets)

These sweets are part of the traditional Catalan gastronomy and are the most typical dessert on All Saints' Day. In former times they were considered to be sacramental, and are still eaten on this day. They are made from a base of marzipan and almond flour to which an array of ingredients are added, resulting in a wide range of flavours.

Made into various shapes, the primary ingredients are marzipan with almond flour, sugar, eggs and, on occasion, water. This dough is left to rest for 24 hours before being made into differing shapes and flavours by adding further ingredients (pine nuts, coffee, crystallized fruit, coconut, etc.) and then baked. In order to be covered by the TSG (Traditional Speciality Guaranteed), the dough must not contain any starch (potato or sweet potato), apple, preservatives or artificial colouring.

Complementary information:

TSG panellets are generally sold loose in patisseries and shops, although they can also be bought in boxes. In either case they must bear a label stating "Panellets. Especialitat Tradicional Garantida" and the community logotype for specific products.
