Organic fresh cheese

Artisanal production of this type of cheese utilises whole pasteurised goat's milk, rennet and salt, without preservatives or additives, or whole pasteurised cow's milk. In both cases the milk is curdled and drained traditionally but it is not pressed, making the cheese soft and malleable.
