‘Orelletes' are sweet specialities inherited from the cuisine of Al-Andalus that are still very popular in the Ebre region.

They are a type of thin, brittle, crispy pastry that is dipped in sugar and then fried. Given their considerable size, large pans are needed to fry them. They contain the following ingredients: whole egg, milk, oil, sugar, yeast, lemon rind, salt and aniseed, and, after frying in olive oil, they are covered in icing sugar.
