Montsec cheese, formatge cendrat, formatge de clua

This is one of the traditional handmade cheeses that were revived in the 1980s. This specific cheese is made in the Montsec mountains.

It is also known as clua or cendrat cheese because of its typical ash colour. It is an aged cheese, semi-cured, made with raw, full-fat goat's milk. Made by lactic coagulation with a soft curd, it is externally smoked over an ash rind.
