Langoustine

The langoustine (Nephrops norvegicus) is a decapod crustacean from the family Nephropidae. It is a food that has been highly valued in Catalonia since the middle of last century.

Its colour is pink-orange. The body is slim and the abdomen long, narrow and less robust than the other Nephropidae. The eyes have enlarged, rounded black corneas and the face has two longitudinal crests with others on the shell and pincers. The tail is very muscular and is the most prized part in gastronomy. Langoustines can grow up to 25cm, but those found on the market today are much smaller. They tend to live in dens and hideouts and are fished by trawling. They can be eaten alone, grilled, cooked on a metal plate or baked in the oven. Moreover, they are outstanding in surf and turf dishes with chicken, duck and also in rice dishes.

Most of the langoustines sold in fishmongers and markets in Catalonia are not caught off its own coast, but Catalan langoustines are greatly esteemed for their excellent taste. They can also be bought frozen.
