Honey is a natural substance produced by bees (Apis mellifera) from the nectar of plants, from secretions of living parts of plants or from  excretions of sucking insects. Bees collect and transform them combining them with specific substances of their own, deposit, dehydrate, store and leave to mature in moths.

The most common honey in the market is centrifuged, filtered and purified. The less processed honey becomes thick naturally, it must be heated to liquefy it by putting it in a double boiler. In its origins, it was a product that gave it magical and sacred values​​. Unlike cane sugar, which ferments, honey is preserved, is considered even antiseptic, tonic, sedative, aperitive, expectorant. In the West was the only sweetener known until the arrival of sugar, brought by the Arabs.

Honey is mainly used in cakes,as an accompaniment of bread and toast for breakfast and snacks, and as an additive in beverages, for example tea. Because of its richness in sugars such as fructose, honey is hygroscopic (absorbs moisture from the air) which makes bread and cakes harden more slowly if we put a little bit. It can also become an essential element in a healthy and imaginative cuisine. Not only honey sweetens desserts, also participates in the kitchen as an ingredient in many recipes: meat, in salads, sauces accompanying etc.
