Girona 'xuixo'

This sweet speciality was first made in the city of Girona in around the 1920s. It appears to be a version of the French choux a la crème, adapted by confectioners in Girona. Nowadays, it is a sugared pastry that is also made beyond the city, although those from Girona are more highly esteemed for their flavour and adherence to the original recipe.

It is a tube-shaped pastry made with flour, eggs, salt, butter, sugar, fresh milk and pressed yeast. These ingredients are worked into a dough that is rolled out until it is elastic and thin. Next, it is cut into cross shapes and filled with butter or lard. The pastry is folded, cut into quarters and filled with confectioners' cream, then rolled up without any of the cream spilling out and left to rise. Finally, it is fried in olive oil and sprinkled with sugar. It is a consistent and very sweet pastry.
