A product made to use up leftovers from making other cheeses. This is one of the most emblematic traditional cheeses of the Pyrenees region.

It is a fermented cheese with a medium to very long aging process - at least two months. Its curd is very soft and sticky, and fairly fatty. The flavour is strong, persistent and aggressive, with an aftertaste of the liqueur using in the making. It is made from cheese curd that is either fresh or in the aging process, from both cows and goats, which is fermented with liqueur in an earthenware dish known as a tupí.
