This ‘cóc' was originally made around Saint John's day in order to make the most of the harvest of a native variety of apple (maçanes), although it was also made with other more acidic apple varieties.

The texture is soft, very similar to a sponge cake, and it has a unique sweet and sour taste, hence the name. It is covered with pieces of unpeeled apple and sometimes sprinkled with a little cinnamon.
