The chanterelle (Cantharellus cibarius) is a fungus that is highly valued by mushroom gatherers. It is easy to preserve because worms cannot usually infest it.

It is a solid mushroom which ranges from golden yellow or orange to a light brown, according to the land. It is funnel-shaped with the stem and cap almost appearing as one. The chanterelle grows in planifolious forests, preferably around oaks and pines. Its flesh is firm and its smell is slightly sweet and fruity. Although it can be eaten raw, its texture makes it difficult to digest. It is excellent in cooked dishes and stews and works well with both meat and fish.
