Cerdanya winter cabbage

This is an autochthonous variety from the Pyrenees that is grown in domestic allotments on a very small scale.

There are two varieties (flat leaf and curly leaf) and traditional methods are used to grow them such as sewing by hand. They are unique in that they are very resistant to extreme conditions, actually improving in final quality when there has been ice on the ground. The cabbages are harvested from mid-December until the end of winter and have a strong, balanced flavour.
