Cabell d'àngel escarole

This is the most valued and popular of the traditional varieties of escarole that are grown in Catalonia. Small and with a low yield, it grows best in cold, dry winters.

This variety has very fine, serrated and curly leaves. The head is small, growing to between 20 and 25cm in diameter. Its main characteristic is that it is extremely fine and has an excellent taste.
