Also known as ‘bull de llengua', ‘donegal de llengua', ‘bolh de llengua' or ‘regina', this was a particularly prized sausage because with tongue as its main ingredient, only one could be made for each beast slaughtered.

This bull variety is made by boiling the tongue, slicing it in half and seasoning it with salt and pepper. Next, strips of pork fillet, belly and sometimes lean minced pork are placed on a piece of fatty membrane, and the mix is seasoned again. Finally, it is tied, sewn up and cooked.
