Brotons i espigalls (shoots and flowers)

Brotonera cabbage, from which these shoots and flowers are taken (at two phases in the plant's growth), is a variety of the cabbage that is cultivated in the Garraf region which has somehow survived, despite being on the verge of disappearing for many years.

It is a cabbage that only produces long leaves. From October to November it produces very leafy shoots known as green cabbage or col de brotó in Sitges, and brotons in the rest of the Garraf. In January it flowers and the flower spikes, which taste mildly of cabbage, can be harvested until March.
