Brossat (cottage cheese), brull

‘Brossat' or ‘brull' is a dairy product traditionally made with the whey that is left over from making other cheeses, and continues to be made this way in many parts of Catalonia.

It is prepared using milk, water and rennet. First, the milk is boiled and then left to cool to around 35º. A mixture of water and sliced rennet with a little whey is then added and it is left to rest. Lastly, the cheese is drained through a cloth.
