Typical of the areas around the Pyrenees, this sausage is made with parts of pork that are not used in other sausages. It is also known as ‘corada' and ‘llango´ssa traidura'.

Deep in flavour, it is made with the leftover cuts after the pig has been quartered. The offal and pieces of meat are boiled, stuffed into a pig's intestine and cooked again.
