The ‘baldana d'arròs', which is similar to ‘botifarró' (black pudding), is the most popular sausage in the Terres de l'Ebre and is even celebrated at ‘baldana' festivals (‘baldanades').

It is a cooked sausage of a reddish black colour that is made by stuffing an intestine with pig's blood, rice, bacon fat, salt and pepper, and sometimes pine nuts. It is eaten fried, grilled and cooked on a metal plate.
