Mushrooms are dried by either leaving them at room temperature or heating them up in order to remove their water content. The varieties of less meaty mushrooms, which grow in numerous locations around the Alta Ribagorça and which are most suited to drying, are the Horn of Plenty, scotch bonnet and chanterelle, among others.
