Sant JuliÓ bread

'Sant JuliÓ' bread is so called in honour of the chapel of Sant JuliÓ d'Altura del Parc Agrari, and has two specific characteristics: the flour and the production process. The production system utilised ensures that every step of the process is controlled (from the type of flour to the resting time, etc.). Sant JuliÓ bread is the outcome of a signed agreement between Forn Tradicional Valero, la Farinera Moratˇ and the AgrÓria de Sabadell i Comarca Cooperative, with a view to making and selling a new variety of bread using wheat from the Agricultural Park of Sabadell.

The wheat used to make this bread comes from crops grown in the Agricultural Park of Sabadell. It is grown in accordance with good agricultural practices and sustainable agriculture criteria with regards to use of synthetic chemical products. This wheat bears the certificate of Integrated Production of Catalonia. The wheat is milled in the Fills de Moretˇ mill in Mollet del VallŔs, using the traditional modern flour mill system. Lastly, the flour undergoes double fermentation with organic yeast and is cooked in a stone oven at a temperature of 250║C for 35 minutes. The care taken in selecting the raw materials and the quality guarantee on the production procedures ensure that Sant JuliÓ bread is of the utmost quality, and highly prized by the people of Sabadell.
