The girella is made with various parts of the lamb, rice, eggs, garlic, parsley, saffron, pepper and salt. Firstly, the lamb's stomach and guts are boiled in order to clean them. Next, the offal and heart are added to the water and boiled for some twenty minutes. This is then mixed with other parts of the lamb: fat, thigh and the meat from the head and neck cubed, rice, eggs, garlic, parsley, saffron, pepper and salt, all of which is put into a casing and boiled for a further thirty minutes.
