Fesol de l'ull ros (cowpea), fesol banyolÝ

Also known as ‘banyolÝ', this is a typical variety of legume in the Baix EmpordÓ and has been cultivated there for centuries. It is sown around Sant Ponš Day (May 11) and is harvested (usually by hand) around August (for the tender ‘escovellar') or September (to be dried). á

It is a small bean with very fine skin which makes it easy to cook, and a mild flavour. In appearance it differs from other beans because it is browner and does not have a black eye.
